This 2nd edition of Electric refrigerator menus and recipes: recipes prepared especially for the General Electric refrigerator is dedicated to the "Modern Homemaker" and authored by the renowned dietitian, cookbook author, and radio show hostess Miss Alice Bradley, Principle of Miss (Fannie!) Farmer's School of Cookery in Boston, MA. In 1927, when this cookbook and refrigeration guide was published, electric refrigeration was still in its infancy and Bradley rightly predicts that "the sum of its usefulness has not in any way been discovered." Included within are general directions for food arrangement, tips for freezing, directions for cleaning ("treat the cabinet as you would any good piece of furniture"), and so much more. All the recipes are thoroughly tested and feature refrigeration and freezing...think gelatin desserts! Stylish 1920's vignettes are peppered throughout, as well as markings and marginalia, done by a small child in pencil. A particularly nostalgic image of Neapolitan ice cream served on early Depression Era green glass can be found on pg. 78.
This piece is an early 20th century hardcover cookbook. The binding is nearly detached. The endpaper is removed and there is a tear on the title page. Conservators will remove the textblock from the case, reline the spine and re-case the textblock in the repaired case. The paper tear will also be repaired and a custom enclosure created for the cookbook.
